Those heavenly hand-made noodles that my Turkish grandmother made were unbelievably delicious by themselves. But when there were some leftovers, Grandma would make a type of frittata called cuajado. She would beat eggs, add some salt, then add the pasta and fry the lot in some oil. The result was a golden, crunchy and chewy delight.
