Djajiki

Ah, the many uses of yogurt throughout the Mediterranean!  This one is from Greece.  It is a simple, refreshing salad of sliced or chopped cucumbers, minced garlic, salt, all mixed in some plain yogurt, atop which one may drizzle some olive oil.  It is cool, refreshing, and absolutely delicious.  This simple salad has about as many variations as there are countries bordering the cobalt Mediterranean sea.
