Bourekas
OMG, the word alone conjures up such delicious memories of childhood! Bourekas are small puff pastries filled with a variety of fillings, either sweet or savory. My grandmother would make them with a mixture of cheese, or cheese and spinach. Since we lived in a still young, developing country, we did not have the easy amenities we find today. Remarkably, therefore, my grandmother would make filo dough by hand. She would mix the flour, then would tirelessly roll out sheets of dough so thin, I could see through them. The same filo would be used to make kadaiffi or baklava, and sometimes she would make noodles out of the dough. Those required somewhat less rolling out, but the process was just as laborious, since she would roll out the dough, then cut it in very long, thin strips which she would then pick up and shake gently to air out, and lay them on top of the bed to dry out. But the resultant flavor was incomparable!
