Israeli Salad

It was a long time before I began adding lettuce to my salads.  In Israel, a typical Israeli salad consists of tomatoes, cucumbers and onion, olive oil and lemon juice.  Of course, there are many variations on this theme, but lettuce rarely added.  Here is a salad I made which had robust flavor, was refreshing and very satisfying.

Israeli Salad

Chopped ripe tomato
Sliced pickling* cucumbers
Sliced radishes
Sliced scallion
A few green or black olives
1 clove minced garlic
1 tsp dried dill weed
Dressing of olive oil, lemon juice, salt & pepper
 

Chop the vegetables, season lightly with salt and pepper (you will also add a bit of salt and pepper to the dressing), whisk together the olive oil, lemon juice, salt and pepper and drizzle over the salad.  Serve.

*Pickling cucumbers are smaller and crisper, and they are the types of cucumbers we use in Israel.  You may substitute any cucumber you like.  You may also add green or red bell peppers, and of course, your imagination is unlimited.
