
Israeli Salad
Chopped ripe tomatoSliced pickling* cucumbersSliced radishesSliced scallionA few green or black olives1 clove minced garlic1 tsp dried dill weedDressing of olive oil, lemon juice, salt & pepper
Chop the vegetables, season lightly with salt and pepper (you will also add a bit of salt and pepper to the dressing), whisk together the olive oil, lemon juice, salt and pepper and drizzle over the salad. Serve.
*Pickling cucumbers are smaller and crisper, and they are the types of cucumbers we use in Israel. You may substitute any cucumber you like. You may also add green or red bell peppers, and of course, your imagination is unlimited.
